Ingredients
1 cup water
1/2 cup unsalted butter
2 tablespoons granulated sugar (for dough)
1/4 teaspoon salt
1 cup all-purpose flour
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon
Vegetable oil for frying
Instructions
Step 1: In a medium saucepan, combine the water, 1/2 cup butter, 2 tablespoons of sugar, and salt. Bring the mixture to a boil over medium-high heat.
Step 2: As soon as the mixture boils, remove from heat and stir in the flour all at once with a wooden spoon until a smooth ball of dough forms.
Step 3: Let the dough cool for about 5 minutes, then transfer it to a piping bag fitted with a large star tip.
Step 4: Heat 2 inches of oil in a large pot or deep skillet to 375°F (190°C).
Step 5: Pipe 4 to 6-inch strips of dough into the hot oil, using scissors to cut the dough at the tip. Work in batches to avoid crowding the pan.
Step 6: Fry the churros for 2-3 minutes per side until they reach a deep golden brown color.
Step 7: Use a slotted spoon to remove the churros and place them briefly on paper towels to drain, then immediately toss them in a mixture of 1/2 cup sugar and 1 tablespoon cinnamon.
Notes
Ensure the oil stays at a consistent 375°F for the best results. Using a thermometer is highly recommended.
