Ingredients
1.5 cups warm water (110°F)
1 tablespoon granulated sugar
2.25 teaspoons active dry yeast (1 packet)
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons melted unsalted butter
2/3 cup baking soda (for the water bath)
10 cups water (for the water bath)
1/2 cup melted butter (for coating)
1/2 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Instructions
Step 1: In a large bowl or stand mixer, combine 1.5 cups warm water, 1 tablespoon sugar, and the yeast. Let sit for 5-10 minutes until foamy.
Step 2: Add the flour, salt, and 2 tablespoons of melted butter. Mix until a dough forms and pull away from the sides of the bowl.
Step 3: Knead the dough for 5 minutes until smooth. Place in an oiled bowl, cover, and let rise in a warm place for 1 hour until doubled in size.
Step 4: Preheat oven to 425°F (218°C) and line two baking sheets with parchment paper.
Step 5: Bring 10 cups of water and 2/3 cup baking soda to a rolling boil in a large pot.
Step 6: Divide dough into 8 equal pieces. Roll each into a 20-inch rope and twist into a pretzel shape.
Step 7: Carefully drop each pretzel into the boiling water for 30 seconds. Remove with a slotted spatula and place on the baking sheets.
Step 8: Bake for 12-15 minutes until dark golden brown.
Step 9: While baking, mix the remaining sugar and cinnamon in a shallow bowl.
Step 10: Brush the warm pretzels with melted butter and coat thoroughly in the cinnamon-sugar mixture.
Notes
Ensure the water bath is boiling before adding the pretzels for the best texture. If the sugar isn’t sticking, use more melted butter.
