Ingredients
2 cups all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup whole milk
2 large eggs
1 teaspoon vanilla extract
2 cups Granny Smith apples, peeled and finely diced
Vegetable oil for frying
1.5 cups powdered sugar (for glaze)
2–3 tablespoons milk or apple cider (for glaze)
1/2 teaspoon vanilla extract (for glaze)
Instructions
Step 1: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
Step 2: In a separate medium bowl, beat the eggs and then stir in the milk and 1 teaspoon of vanilla extract.
Step 3: Gently fold the wet ingredients into the dry ingredients until just combined; do not overmix. The batter should be thick.
Step 4: Fold in the finely diced apples until evenly distributed throughout the batter.
Step 5: Heat about 1.5 to 2 inches of vegetable oil in a heavy skillet or Dutch oven to 350°F (175°C).
Step 6: Drop approximately 1/4 cup of batter into the hot oil for each fritter, flattening them slightly with the back of a spoon. Do not overcrowd the pan.
Step 7: Fry for 2-3 minutes per side until they reach a deep golden brown color. Remove with a slotted spoon and drain on a wire rack over paper towels.
Step 8: While the fritters are cooling slightly, whisk together the powdered sugar, milk/cider, and vanilla for the glaze.
Step 9: Dip the warm fritters into the glaze, turning to coat both sides, then return to the wire rack to let the glaze set before serving.
Notes
Ensure the oil stays consistent at 350 degrees. Use a small dice on the apples to ensure they cook through.
