Ingredients
3 1/2 cups bread flour
1/4 cup granulated sugar
2 1/4 tsp active dry yeast
1 tsp salt
1 cup whole milk, warmed (110°F)
4 tbsp unsalted butter, melted
1 large egg, room temperature
1 cup raisins
2 tbsp ground cinnamon
1/4 cup brown sugar (for the filling)
1 tbsp milk (for the filling)
Instructions
Step 1: In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let it sit for 5-10 minutes until foamy.
Step 2: In a large mixing bowl or stand mixer, combine the remaining sugar, salt, melted butter, egg, and 2 cups of flour. Add the yeast mixture and stir to combine.
Step 3: Gradually add the remaining flour and knead for 8 minutes until the dough is smooth and elastic. Fold in the raisins during the last 2 minutes of kneading.
Step 4: Place the dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours or until doubled in size.
Step 5: Punch down the dough and roll into a 9×15 inch rectangle. Mix the brown sugar and cinnamon together. Lightly brush the dough with 1 tbsp milk, then sprinkle with the cinnamon-sugar mixture.
Step 6: Roll the dough tightly from the short end and place in a greased 9×5 inch loaf pan. Cover and let rise for another 45 minutes.
Step 7: Preheat oven to 350°F (175°C). Bake for 35-40 minutes or until the top is golden brown and the internal temperature is 190°F.
Step 8: Remove from the pan and cool completely on a wire rack before slicing.
Notes
Ensure the milk is not too hot to avoid killing the yeast. For a shinier crust, brush the top with melted butter immediately after baking.
