Ingredients
1 cup old-fashioned rolled oats
1 cup unsweetened almond milk (or milk of choice)
1/2 cup non-fat Greek yogurt
1 tablespoon chia seeds
1 teaspoon ground cinnamon
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
For the Cinnamon Swirl: 1 tbsp almond butter, 1 tsp maple syrup, 1/2 tsp cinnamon
For the Icing: 2 tbsp Greek yogurt, 1 tsp maple syrup, 1/2 tsp milk
Instructions
Step 1: In a medium-sized mixing bowl, combine the rolled oats, milk, 1/2 cup Greek yogurt, chia seeds, 1 teaspoon cinnamon, 1 tablespoon maple syrup, and vanilla extract.
Step 2: Stir the mixture thoroughly until all ingredients are well combined and the chia seeds are evenly distributed throughout the cinnamon roll overnight oats base.
Step 3: In a small separate bowl, mix the almond butter, 1 teaspoon maple syrup, and 1/2 teaspoon cinnamon to create the cinnamon swirl paste.
Step 4: Divide half of the oat mixture between two glass jars. Add a layer of the cinnamon swirl paste, then top with the remaining oat mixture.
Step 5: Seal the jars tightly and refrigerate for at least 6 hours, or ideally overnight, to allow the cinnamon roll overnight oats to thicken.
Step 6: Before serving, whisk together the icing ingredients and drizzle over the top of the oats. Enjoy cold or slightly warmed.
Notes
For a vegan version, use dairy-free yogurt and a plant-based milk. For gluten-free, ensure your oats are certified gluten-free.
