Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/2 cup unsalted butter, melted
1 cup granulated sugar
1/2 cup brown sugar, packed
1 cup pumpkin puree
2 large eggs
1/4 cup vegetable oil
1/2 cup brown sugar (for swirl)
1 tablespoon ground cinnamon (for swirl)
1/4 cup unsalted butter, softened (for swirl)
4 oz cream cheese, softened
1 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan with non-stick spray or butter.
Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, 2 teaspoons of cinnamon, and cloves.
Step 3: In a large bowl, combine 1/2 cup melted butter, 1 cup granulated sugar, 1/2 cup brown sugar, pumpkin puree, eggs, and vegetable oil. Whisk until smooth.
Step 4: Gradually fold the dry ingredients into the wet pumpkin mixture until just combined. Pour the batter into the prepared baking pan.
Step 5: In a small bowl, mix the 1/2 cup brown sugar, 1 tablespoon cinnamon, and 1/4 cup softened butter until a paste forms. Drop spoonfuls of this over the pumpkin batter.
Step 6: Use a knife to gently swirl the cinnamon mixture into the pumpkin batter in a zigzag pattern.
Step 7: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for at least 15 minutes.
Step 8: To make the glaze, beat the cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over the warm cake before serving.
Notes
Ensure the cream cheese is fully at room temperature to avoid lumps in the glaze.
