Ingredients
2 cups all-purpose flour
1.5 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
3 large eggs
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
3/4 cup vegetable oil
1 tsp vanilla extract
2 cups carrots, finely grated (about 3–4 medium carrots)
1 cup walnuts, toasted and chopped
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Step 3: In a large bowl, whisk the eggs with granulated sugar and brown sugar until light and fluffy.
Step 4: Gradually whisk in the oil and vanilla extract until well combined.
Step 5: Fold the dry ingredients into the wet mixture until just combined, avoiding over-mixing.
Step 6: Gently stir in the grated carrots and chopped walnuts until evenly distributed.
Step 7: Pour the batter into the prepared pan and bake for 55-65 minutes, or until a toothpick comes out clean.
Step 8: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For the best results, always grate your carrots fresh. If the top browns too quickly, tent with foil during the last 15 minutes of baking.
