Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan thoroughly with butter or non-stick spray.
Step 2: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth, then stir in the melted butter until well combined.
Step 3: Add the brown sugar, beaten egg, and vanilla extract to the banana mixture, stirring until the batter is uniform.
Step 4: Sprinkle the baking soda, salt, and cinnamon over the wet ingredients and mix gently.
Step 5: Fold in the all-purpose flour using a spatula, being careful not to overmix; stop as soon as no white streaks remain.
Step 6: Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a tester inserted into the center comes out clean.
Step 7: Remove from the oven and let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For extra moisture, add a tablespoon of sour cream or Greek yogurt to the batter. Always use the brownest bananas available for the best flavor.
