Ingredients
2 to 3 very ripe bananas, mashed
1/3 cup melted butter
3/4 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 4×8-inch or 9×5-inch loaf pan.
Step 2: In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
Step 3: Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract until well combined.
Step 4: Fold in the all-purpose flour gently, being careful not to over-mix the batter.
Step 5: Pour the batter into your prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Remove from the oven and let cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.
Notes
For the best flavor, use bananas that are almost completely black. You can freeze overripe bananas to use for this recipe later.
