Ingredients
1 tablespoon olive oil
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can diced tomatoes, undrained
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional, for a kick)
1 teaspoon sugar (to balance acidity)
Salt and freshly ground black pepper to taste
1 pound spaghetti

Instructions
Step 1: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
Step 2: Add the minced garlic and red pepper flakes (if using) to the pot. Sauté for another 1 minute until fragrant, being careful not to burn the garlic.
Step 3: Pour in the crushed tomatoes and diced tomatoes (with their juice). Stir in the dried oregano, dried basil, and sugar. Season generously with salt and pepper.
Step 4: Bring the sauce to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 20-25 minutes, stirring occasionally, to allow the flavors to meld. The longer it simmers, the richer it will taste.
Step 5: While the sauce simmers, bring a large pot of heavily salted water to a rolling boil. Add the spaghetti and cook according to package directions until al dente.
Step 6: Before draining the spaghetti, reserve about 1 cup of the starchy pasta water. Drain the spaghetti and add it directly to the simmering marinara sauce.
Step 7: Toss the spaghetti with the sauce, adding a little reserved pasta water as needed to create a glossy, well-coated consistency. This helps the sauce cling to the pasta.

Notes
