Ingredients
1 lb Rotini or Bowtie pasta
1 lb Thick-cut bacon, cooked and crumbled
1 lb Deli turkey, thick-sliced and cubed
2 cups Cherry tomatoes, halved
1 cup Sharp cheddar cheese, cubed
3 cups Romaine lettuce, chopped
1/2 cup Red onion, finely diced
1 cup Mayonnaise
1/4 cup Sour cream
1 tbsp Dijon mustard
1 tbsp Lemon juice
1 tsp Garlic powder
Salt and pepper to taste
Instructions
Step 1: Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Drain and rinse immediately with cold water.
Step 2: While the pasta cooks, fry the bacon until crispy. Drain on paper towels and crumble into small pieces.
Step 3: In a small mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, salt, and pepper to create the dressing for your club sandwich pasta salad.
Step 4: In a large serving bowl, combine the cooled pasta, cubed turkey, crumbled bacon, cherry tomatoes, cheddar cheese, and red onion.
Step 5: Pour the dressing over the ingredients and toss gently until everything is evenly coated.
Step 6: Just before serving, fold in the chopped romaine lettuce to ensure it stays crisp within the club sandwich pasta salad.
Step 7: Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
To keep the lettuce from wilting, only add it right before you are ready to serve the salad.
