Ingredients
1 1/2 cups all-purpose flour
3/4 cup Dutch-processed cocoa powder
1 1/2 cups granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs, room temperature
3/4 cup whole milk
1/2 cup vegetable oil
2 tsp vanilla extract
3/4 cup boiling water
2 cups chocolate buttercream frosting
1 cup large marshmallows
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
Step 2: In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Step 3: Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for about 2 minutes until well combined.
Step 4: Stir in the boiling water by hand. The batter will be very thin, but this is normal for this cobweb cupcakes recipe.
Step 5: Pour the batter into the prepared muffin tin and bake for 18-22 minutes, or until a toothpick comes out clean. Let the cupcakes cool completely on a wire rack.
Step 6: Once cooled, frost each cupcake with a smooth layer of chocolate buttercream.
Step 7: Place marshmallows in a microwave-safe bowl and heat for 15-20 seconds until they expand and soften. Stir with a spoon.
Step 8: Allow the marshmallow to cool for a minute until it is safe to touch. Using your fingers, pull a small amount of marshmallow and stretch it into thin strands, draping them over the cupcakes to create a web pattern.
Notes
Ensure the marshmallows are not too hot when you start stretching them to avoid burns. If the marshmallow hardens, simply microwave it for another 5-10 seconds.
