Ingredients
2 tbsp coconut oil or vegetable oil
1 large yellow onion, finely diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2–3 tbsp red curry paste (adjust to your spice preference)
1 (14.5 oz) can diced tomatoes, undrained
1.5 cups red lentils, rinsed
4 cups vegetable broth
1 (13.5 oz) can full-fat coconut milk
5 oz fresh spinach
Juice of 1 lime
Fresh cilantro, chopped, for garnish
Salt and freshly ground black pepper to taste
Instructions
Step 1: Heat the coconut oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
Step 2: Add the minced garlic and grated ginger to the pot. Cook for another minute until fragrant, being careful not to burn the garlic.
Step 3: Stir in the red curry paste. Cook for 1-2 minutes, stirring constantly, to toast the spices and deepen their flavor.
Step 4: Pour in the undrained diced tomatoes, rinsed red lentils, and vegetable broth. Stir well to combine everything. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the lentils are tender and have absorbed most of the liquid. Stir occasionally to prevent sticking.
Step 5: Remove the lid and stir in the full-fat coconut milk. Mix thoroughly until the curry is creamy and well combined.
Step 6: Add the fresh spinach. Stir until the spinach wilts down into the curry, which usually takes only 1-2 minutes.
Step 7: Remove the pot from the heat. Stir in the fresh lime juice. Taste and season with salt and freshly ground black pepper as needed.
Step 8: Ladle the warm Coconut Curry Instant Lentils into bowls. Garnish generously with fresh cilantro. Serve immediately with your favorite accompaniments.
Notes
For extra heat, add a pinch of cayenne pepper or a chopped green chili with the garlic and ginger. Adjust salt to taste before serving. Leftovers can be stored in the refrigerator for up to 3-4 days.
