Ingredients
4 salmon fillets (6 oz each)
1 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
2 tbsp Thai red curry paste
1 can (13.5 oz) full-fat coconut milk
1 tbsp fish sauce
1 tsp brown sugar
1 lime, juiced
Fresh cilantro for garnish
Salt and pepper to taste
Instructions
Step 1: Season the salmon fillets with salt and pepper on both sides after patting them dry.
Step 2: In a large skillet, heat olive oil over medium-high heat and sear salmon for 4-5 minutes per side until golden; remove and set aside.
Step 3: Lower heat to medium, melt butter in the same pan, and sauté minced garlic for 1 minute.
Step 4: Stir in the red curry paste for 1 minute, then pour in coconut milk, fish sauce, and brown sugar. Simmer for 5 minutes.
Step 5: Return salmon to the pan, spooning the sauce over the fillets, and simmer for 2 more minutes. Garnish with lime juice and cilantro.
Notes
Ensure you use full-fat coconut milk for the creamiest texture. If the sauce is too thick, add a splash of water or broth.
