Ingredients
2 cups glutinous rice (sticky rice)
1 (13.5 oz) can full-fat coconut milk
1/2 cup granulated sugar (or to taste)
1/4 teaspoon salt
Zest of 1 lime
2 tablespoons fresh lime juice
2 ripe mangoes, diced
1 cup fresh pineapple, diced
1 kiwi, peeled and diced
1/2 cup fresh raspberries or blueberries (optional)
1 tablespoon fresh lime juice (for salsa)
1–2 tablespoons honey or maple syrup (for salsa, optional)
Fresh mint leaves or toasted coconut flakes, for garnish
Instructions
Step 1: Rinse the glutinous rice thoroughly under cold running water until the water runs clear. This may take 5-7 rinses.
Step 2: Place the rinsed rice in a large bowl, cover with fresh cold water, and soak for at least 4 hours, or preferably overnight.
Step 3: Drain the soaked rice well. Line a steamer basket with cheesecloth or a clean kitchen towel. Spread the rice evenly in the basket.
Step 4: Place the steamer basket over a pot of boiling water, ensuring the water does not touch the rice. Steam for 25-30 minutes, or until the rice is translucent, tender, and sticky.
Step 5: While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine the full-fat coconut milk, granulated sugar, and salt. Heat over medium-low heat, stirring constantly, until the sugar is fully dissolved. Do not boil.
Step 6: Once the rice is cooked, transfer it to a medium bowl. Immediately pour the warm coconut sauce over the rice. Add the zest of 1 lime and 2 tablespoons of fresh lime juice.
Step 7: Gently fold the rice to combine, ensuring all grains are coated with the coconut mixture. Cover the bowl with a lid or plastic wrap and let it sit for at least 15-20 minutes, allowing the rice to absorb the flavors and become even stickier.
Step 8: Prepare the fruit salsa. In a separate bowl, combine the diced mangoes, pineapple, kiwi, and any optional berries. Add 1 tablespoon of fresh lime juice and honey or maple syrup (if desired) and toss gently to combine.
Step 9: To serve, scoop generous portions of the warm or room-temperature coconut & lime sticky rice onto plates or into bowls. Top with a spoonful of the vibrant fruit salsa.
Step 10: Garnish with fresh mint leaves or toasted coconut flakes for an extra touch of flavor and visual appeal. Enjoy your homemade Coconut & Lime Sticky Rice with Fruit Salsa!
Notes
For best results, use fresh, ripe tropical fruits for the salsa. Adjust sugar to your preference and the sweetness of your fruit. Leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days, though the rice may firm up slightly.
