Ingredients
1.5 cups medium semolina
0.5 cup all-purpose flour
1 cup unsweetened desiccated coconut
1 cup granulated sugar
1 cup plain Greek yogurt
0.5 cup unsalted butter, softened
3 large eggs
2 tsp baking powder
Zest of 2 limes
1/4 cup lime juice
1 tsp vanilla extract
For the syrup: 1 cup sugar, 3/4 cup water, 1/4 cup lime juice, 1 lime sliced
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or a round cake tin.
Step 2: In a large bowl, cream the softened butter and 1 cup of sugar until pale and fluffy, then mix in the lime zest.
Step 3: Add the eggs one by one, beating well after each addition. Stir in the vanilla extract, Greek yogurt, and 1/4 cup lime juice.
Step 4: In a separate bowl, whisk together the semolina, flour, coconut, and baking powder.
Step 5: Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
Step 6: Pour the batter into the prepared pan and bake for 35-40 minutes, or until a skewer comes out clean and the top is golden brown.
Step 7: While the cake bakes, combine the syrup ingredients in a small saucepan. Bring to a boil, then simmer for 5 minutes. Let it cool slightly.
Step 8: Remove the cake from the oven and immediately pour the syrup evenly over the hot cake. Allow it to soak and cool completely before slicing.
