2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1/2 teaspoon sea salt, or to taste
1/4 teaspoon black pepper, or to taste
1 lemon, cut into wedges, for serving

Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: In a small bowl, combine the olive oil, minced garlic, lemon zest, chopped fresh dill, chopped fresh parsley, and chopped fresh chives. Season generously with salt and freshly ground black pepper.
Step 3: Pat the cod fillets thoroughly dry with paper towels. Place the dried fillets on the prepared baking sheet.
Step 4: Spoon or brush the herb and oil mixture evenly over the top of each cod fillet, ensuring each piece is well-coated.
Step 5: Bake for 12-18 minutes, or until the cod is opaque and flakes easily with a fork. The exact baking time will depend on the thickness of your fillets. For perfect results, an internal temperature of 145°F (63°C) is ideal.
