Ingredients
8 oz Feta cheese (preferably in brine)
1/2 cup Greek yogurt (Full-fat or 2%)
1 tablespoon Extra virgin olive oil
1 Lemon (zested and juiced)
1 clove Garlic (finely minced)
2 tablespoons Fresh dill (chopped)
1 tablespoon Fresh parsley (chopped)
1/4 teaspoon Black pepper
Optional: Red pepper flakes for garnish
Instructions
Step 1: Drain the feta cheese and crumble it into a food processor or a large mixing bowl.
Step 2: Add the Greek yogurt, olive oil, lemon juice, and minced garlic to the feta.
Step 3: Pulse the food processor until the mixture is smooth and creamy, or mash thoroughly with a fork if working by hand.
Step 4: Fold in the lemon zest, chopped dill, parsley, and black pepper using a spatula.
Step 5: Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
Step 6: Garnish with an extra drizzle of olive oil and a pinch of red pepper flakes before serving cold.
Notes
Use high-quality sheep’s milk feta for the creamiest results. If the dip is too thick, add a teaspoon of water or additional lemon juice.
