This classic collard greens recipe brings the soulful flavors of the South right to your kitchen. Tender greens braised low and slow with smoky ham hocks (or smoked turkey), garlic, onion, and a hint of apple cider vinegar create an unforgettable side dish. 2–3 lbs fresh collard greens
1–2 smoked ham hocks (or 1 lb smoked turkey wings/necks, or 4–6 slices thick-cut bacon)
1 large yellow onion, diced
4–6 cloves garlic, minced
6–8 cups chicken or vegetable broth (or water)
1/4 cup apple cider vinegar (plus more to taste)
1–2 tsp red pepper flakes (optional, for heat)
1 bay leaf (optional)
Salt and freshly ground black pepper to taste
Hot sauce, for serving (optional)

Instructions

Step 1: Thoroughly clean the collard greens. Remove any tough stems and discard yellowed leaves. Fill a large basin with cold water and soak the greens for 10-15 minutes, gently swishing them around to dislodge dirt. Drain and repeat this process 2-3 times until the water is completely clear. Stack the clean leaves, roll them tightly, and slice them into 1-inch ribbons.
Step 2: Prepare your smoked meat. If using ham hocks or smoked turkey, place them in a large Dutch oven or heavy-bottomed pot, cover with 6-8 cups of water or broth, and bring to a simmer. Cook for 30-45 minutes to start extracting flavor. If using bacon, render it in the pot until crispy, then remove the bacon and set aside, leaving 1-2 tablespoons of fat in the pot.
Step 3: Add the aromatics. If using ham hocks/turkey, remove them temporarily. Add diced onion to the pot and sauté over medium heat for 5-7 minutes until softened and translucent. Add minced garlic and red pepper flakes (if using) and cook for another 1-2 minutes until fragrant.
Step 4: Combine and simmer. Return the smoked meat (if removed) to the pot, or if using bacon, add the broth. Add the cleaned and sliced collard greens to the pot. It will look very full, but the greens will wilt down quickly. Add the bay leaf (if using). Bring the liquid to a gentle simmer, then reduce the heat to low, cover the pot, and cook for 1.5 to 2 hours, or until the collard greens are very tender. Stir occasionally to ensure even cooking.
Step 5: Finish and season. Once the greens are tender, carefully remove the smoked meat. Shred any meat from the bones and return it to the pot. Stir in the apple cider vinegar. Taste the collard greens and their ‘pot liquor.’ Adjust seasoning with salt, pepper, and more apple cider vinegar or hot sauce as desired. The pot liquor should be rich, savory, and slightly tangy.
Step 6: Serve warm. Ladle the collard greens into bowls, ensuring each serving gets plenty of the flavorful pot liquor. Garnish with the reserved crispy bacon (if used) or a dash of hot sauce if desired. Enjoy this soulful Southern classic!
