Ingredients
6 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon kosher salt
1 cup high-quality BBQ sauce
2 tablespoons honey
1 tablespoon apple cider vinegar
Instructions
Step 1: Preheat your grill to medium-high heat (about 375-400°F). If using charcoal, create a two-zone fire by piling coals on one side.
Step 2: In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, salt, and pepper to create a dry rub.
Step 3: Pat the chicken thighs dry with paper towels. Rub them with olive oil and then generously coat with the dry rub on all sides.
Step 4: Place the chicken skin-side down on the direct heat side of the grill. Sear for 5-7 minutes until the skin is crispy and has grill marks.
Step 5: Flip the chicken and move it to the indirect heat side of the grill. Close the lid and cook for 20-25 minutes.
Step 6: While the chicken cooks, mix the BBQ sauce, honey, and apple cider vinegar in a small bowl.
Step 7: During the last 10 minutes of cooking, brush the glaze over the chicken every 3-4 minutes, flipping occasionally until the internal temperature reaches 165°F.
Step 8: Remove from the grill and let the chicken rest for 5-10 minutes before serving.
Notes
For extra smoky flavor, use hickory wood chips. Always ensure the chicken reaches an internal temperature of 165°F.
