Ingredients
2 (15 ounce) cans whole kernel corn, drained
1 (15 ounce) can creamed corn
1 cup sour cream (full-fat recommended, or 8 oz softened cream cheese)
1/2 cup (1 stick) unsalted butter, melted
1/4 cup all-purpose flour
1/4 cup granulated sugar (optional, for sweeter casserole)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
Step 2: In a large mixing bowl, combine the drained whole kernel corn, creamed corn, sour cream (or softened cream cheese), melted butter, flour, sugar (if using), salt, and black pepper. Stir well until all ingredients are thoroughly combined and the mixture is smooth.
Step 3: Pour the corn mixture evenly into your prepared baking dish. Spread it out with a spatula to ensure an even layer.
Step 4: Bake for 45-60 minutes, or until the casserole is golden brown around the edges, set in the center, and bubbly. If the top starts to brown too quickly, you can loosely cover it with aluminum foil.
Step 5: Remove the corn casserole from the oven and let it rest for 5-10 minutes before serving. This allows it to set slightly and makes for easier scooping. Garnish with fresh chopped chives or parsley, if desired. Serve warm.
Notes
For an even richer casserole, replace sour cream with 8 ounces of softened cream cheese. For a savory twist, add 1 cup of shredded cheddar cheese or diced jalapeños to the mixture before baking.
