Ingredients
4 ears fresh corn on the cob, shucked and cleaned
2 tbsp unsalted butter, melted
1 tbsp olive oil
3 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp chili powder (or cayenne pepper for more heat)
1/2 tsp onion powder
1/4 tsp salt, or to taste
1/8 tsp black pepper, or to taste
2 tbsp freshly grated Parmesan cheese
1 tbsp fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare Your Corn. Start by shucking your fresh corn on the cob, removing all husks and silk. Wash the corn under cold water and pat it thoroughly dry with a paper towel. This is crucial for crispiness.
Step 2: Safely Cut the Corn into Ribs. Lay one ear of corn flat on a sturdy cutting board. Using a very sharp, heavy chef’s knife, carefully slice the corn lengthwise, straight through the center of the cob. Once you have two halves, lay each half flat-side down and cut it in half lengthwise again, creating four ‘ribs’ from each ear. Repeat for all corn ears.
Step 3: Prepare the Flavorful Seasoning. In a small bowl, whisk together the melted unsalted butter, olive oil, minced fresh garlic, smoked paprika, chili powder (or cayenne pepper for more heat), onion powder, and a good pinch of salt and black pepper. Stir until everything is well combined into a thick paste or sauce.
Step 4: Coat the Corn Ribs. Place the cut corn ribs in a large bowl. Pour the butter-spice mixture over the corn. Use your hands (wearing gloves if you prefer) or tongs to toss and massage the seasoning into every nook and cranny of the corn ribs, ensuring they are evenly coated.
Step 5: Cook the Corn Ribs (Choose Your Method!). Preheat your air fryer to 375°F (190°C). Arrange the seasoned corn ribs in a single layer in the air fryer basket, ensuring not to overcrowd. Air fry for 12-18 minutes, shaking the basket or flipping the ribs halfway through, until the corn is tender, lightly charred, and curled into ‘rib’ shapes. (Alternatively, roast in a 400°F/200°C oven for 20-30 mins, or grill on medium-high for 10-15 mins).
Step 6: Finish with Parmesan and Serve. Once the Corn Ribs are cooked to perfection, transfer them to a serving platter. Immediately sprinkle generously with freshly grated Parmesan cheese and chopped fresh parsley. The residual heat will slightly melt the Parmesan, creating a delectable cheesy coating. Serve immediately.
Notes
For extra heat, add a pinch more cayenne pepper. Don’t overcrowd your air fryer or baking sheet; cook in batches if necessary to ensure even crisping. The key to perfectly curled ‘ribs’ is proper slicing and adequate cooking time. Freshly grated Parmesan makes a big difference!
