Ingredients
1 (12-inch) deep-dish pie crust, pre-baked or unbaked
1 (29-ounce) can 100% pure pumpkin purée
1 1/2 cups granulated sugar
1/2 cup light brown sugar, packed
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
4 large eggs, lightly beaten
1 (12-ounce) can evaporated milk
Instructions
Step 1: Preheat your oven to 400°F (200°C). If using a frozen pie crust, follow package directions for pre-baking if necessary. For a flakier crust, blind bake the crust for 10-15 minutes, or until lightly golden. This helps prevent a soggy bottom for your Costco Pumpkin Pie.
Step 2: In a very large mixing bowl, combine the pumpkin purée, granulated sugar, light brown sugar, and salt. Whisk until well combined and smooth.
Step 3: Add the ground cinnamon, ground ginger, ground cloves, and ground nutmeg to the pumpkin mixture. Whisk thoroughly until all the spices are evenly distributed throughout the filling.
Step 4: Gradually add the lightly beaten large eggs to the pumpkin mixture, whisking constantly until fully incorporated. This ensures a smooth, even texture for your Costco Pumpkin Pie.
Step 5: Slowly pour in the evaporated milk, whisking continuously until the mixture is completely smooth and uniform. This creates the signature creamy consistency.
Step 6: Carefully pour the pumpkin pie filling into your prepared 12-inch pie crust. Be gentle not to overfill the crust.
Step 7: Reduce the oven temperature to 350°F (175°C). Place the pie on a baking sheet to catch any potential drips and for easier handling.
Step 8: Bake for 50-60 minutes, or until the edges are set, but the center still has a slight jiggle. To prevent the crust from burning, cover the edges with foil or a pie crust shield after about 30 minutes of baking.
Step 9: Once baked, carefully remove the Costco Pumpkin Pie from the oven. Let it cool completely on a wire rack at room temperature for at least 3-4 hours, or ideally, chill it in the refrigerator for several hours or overnight before serving. This allows the pie to fully set and achieve its optimal creamy texture.
Notes
For best results, use a 100% pure pumpkin purée and not pumpkin pie filling. Allowing the pie to chill overnight truly enhances its texture and flavor. Serve with a dollop of fresh whipped cream or a sprinkle of cinnamon.
