Ingredients
1 lb Italian sausage (sweet or hot)
1 large yellow onion, diced
3 cloves garlic, minced
2 tbsp tomato paste
24 oz marinara sauce or crushed tomatoes
6 cups low-sodium chicken broth
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
8 oz lasagna noodles, broken into bite-sized pieces
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil for garnish
Salt and black pepper to taste
Instructions
Step 1: In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it into small crumbles. Drain excess fat.
Step 2: Add the diced onion to the pot and sauté for 5 minutes until translucent. Stir in the minced garlic and tomato paste, cooking for another 2 minutes.
Step 3: Pour in the chicken broth and marinara sauce. Add the oregano, red pepper flakes, salt, and pepper. Bring the mixture to a rolling boil.
Step 4: Add the broken lasagna noodles to the pot. Reduce heat to a simmer and cook for 10-12 minutes or until the noodles are al dente.
Step 5: While the soup simmers, mix the ricotta, mozzarella, and Parmesan in a small bowl to create the cheese topping.
Step 6: Ladle the soup into bowls and top each with a generous dollop of the cheese mixture and fresh basil.
Notes
To prevent noodles from getting too soft, cook them separately and add them to the bowl if you plan on having leftovers.
