2 packs ramen noodles (discard seasoning packets)
1 lb chicken breast, thinly sliced
4 cups high-quality chicken broth
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
1 tablespoon fresh ginger, grated
3 cloves garlic, minced
2 soft-boiled eggs
2 scallions, sliced
1 teaspoon rice vinegar
Optional: Chili oil, nori, sesame seeds
Instructions
Step 1: Heat the sesame oil in a large pot over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
Step 2: Add the sliced chicken to the pot. Cook for 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through.
Step 3: Pour in the chicken broth, soy sauce, and rice vinegar. Bring the mixture to a gentle simmer for 10 minutes to allow the flavors to meld.
Step 4: In a separate pot of boiling water, cook the ramen noodles according to package directions. Drain and set aside.
Step 5: Divide the cooked noodles into two deep bowls. Ladle the hot chicken and broth over the noodles.
Step 6: Top each cozy ramen chicken bowl with a sliced soft-boiled egg, scallions, and your choice of optional garnishes like chili oil or sesame seeds.
Notes
For the best flavor, use fresh ginger rather than powder. If you want a lower sodium version, use low-sodium chicken broth and tamari instead of soy sauce.
