8 oz cream cheese, softened
6 oz crab meat (real or imitation), finely chopped/shredded
2 green onions, thinly sliced
1 clove garlic, minced
1 tsp Worcestershire sauce
1 tsp soy sauce
Pinch of black pepper
24–30 square wonton wrappers
Water (for sealing)
3–4 cups vegetable oil (or other neutral oil) for frying
Instructions
Step 1: In a medium bowl, combine the softened cream cheese, finely chopped crab meat, minced green onions, minced garlic, Worcestershire sauce, soy sauce, and a pinch of black pepper. Mix thoroughly until well combined and smooth.
Step 2: Lay out one wonton wrapper on a clean surface. Place about 1 to 1.5 teaspoons of the crab and cream cheese filling in the center of the wrapper.
Step 3: Lightly moisten the edges of the wonton wrapper with water using your finger. Fold the wrapper into your desired shape (triangle or purse), pressing firmly around the filling to seal tightly and remove any air bubbles.
Step 4: Place the assembled rangoons on a parchment-lined baking sheet, ensuring they do not touch. Repeat with the remaining filling and wrappers.
Step 5: Heat 2-3 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium-high heat until it reaches 350°F (175°C). Use a deep-fry thermometer to monitor the temperature.
Step 6: Carefully place 4-5 rangoons into the hot oil, being careful not to overcrowd the pot. Fry for 2-3 minutes, turning occasionally, until they are golden brown and crispy on all sides.
Step 7: Using a slotted spoon or spider, remove the fried crab rangoons and transfer them to a plate lined with paper towels to drain excess oil. Repeat with the remaining rangoons.
Step 8: Serve the ultimate crispy crab rangoons immediately with your favorite dipping sauce.
Notes
For best results, do not overfill the wontons. Use high-quality imitation crab meat or fresh crab meat for the best flavor. These rangoons are best served immediately after frying. You can freeze un-fried rangoons: place them on a parchment-lined tray in the freezer until solid, then transfer to a freezer-safe bag for up to 1 month. Fry from frozen, adding a minute or two to the cook time.
