Ingredients
24 wonton wrappers
8 oz cream cheese, softened to room temperature
6 oz crab meat (lump or imitation), finely minced
2 green onions, thinly sliced
1 clove garlic, minced
1/2 teaspoon Worcestershire sauce
1/2 teaspoon granulated sugar
Vegetable oil for frying
Small bowl of water (for sealing)
Instructions
Step 1: In a medium bowl, combine the softened cream cheese, minced crab meat, green onions, garlic, Worcestershire sauce, and sugar. Mix until smooth and well combined.
Step 2: Lay out a few wonton wrappers on a clean surface. Keep the remaining wrappers covered with a damp paper towel.
Step 3: Place 1 teaspoon of the cream cheese mixture in the center of each wrapper.
Step 4: Using your finger, lightly moisten the edges of the wrapper with water.
Step 5: Bring the opposite corners of the wrapper together to meet in the center. Pinch tightly to seal. Bring the remaining two corners to the center and pinch all seams shut, ensuring there are no air pockets.
Step 6: Heat about 2 inches of oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).
Step 7: Carefully drop 4-5 rangoons into the hot oil at a time. Fry for 2-3 minutes or until they are golden brown and crispy.
Step 8: Remove with a slotted spoon and drain on a wire cooling rack. Serve warm with sweet and sour sauce.
Notes
Ensure the oil stays at a consistent 350°F. If the filling leaks, it usually means there was an air pocket or the seal wasn’t tight enough.
