Ingredients
1 large pre-made flatbread (naan or pre-baked pizza crust)
8 oz wheel of Brie cheese, rind removed (optional, but recommended for smoother melt), sliced
1/2 cup fresh or frozen cranberries (thawed if frozen)
1/4 cup sliced almonds
2 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, finely chopped
2 tbsp olive oil
1 clove garlic, minced
Pinch of red pepper flakes (optional, for a little kick)
Honey or maple syrup for drizzling (optional, for serving)
Salt and freshly ground black pepper to taste
Instructions
Step 1: Preheat your oven to 400°F (200°C). Place your chosen flatbread (naan or pre-baked pizza crust) on a baking sheet. This ensures easy transfer in and out of the oven and helps with even baking.
Step 2: In a small bowl, whisk together the olive oil, minced garlic, finely chopped fresh rosemary, finely chopped fresh thyme, a pinch of salt, and a dash of freshly ground black pepper. If using, add a tiny pinch of red pepper flakes for a subtle warmth.
Step 3: Evenly brush the herb and garlic olive oil mixture over the entire surface of the flatbread, leaving a small border around the edges for a crust. Next, arrange the sliced Brie cheese over the oiled flatbread. Then, scatter the fresh or thawed cranberries and sliced almonds evenly over the cheese.
Step 4: Carefully transfer the baking sheet into the preheated oven. Bake for 15-20 minutes, or until the Brie is beautifully melted and bubbly, the cranberries are slightly softened, and the edges of the flatbread are golden brown and crispy.
Step 5: Once baked to perfection, carefully remove from the oven. Let it cool on the baking sheet for just 2-3 minutes before transferring it to a cutting board. Drizzle with a touch of honey or maple syrup if desired. Garnish with a few extra fresh herb sprigs. Slice into squares or wedges and serve immediately.
Notes
For best results, use a high-quality Brie cheese. If using a thicker crust, you might need to increase baking time slightly. A quick pre-bake of the flatbread can ensure a crispier base. Don’t forget the optional honey drizzle for an extra layer of sweetness!
