No-Bake Cranberry Pecan Energy Bites

These delightful no-bake cranberry pecan energy bites are the perfect grab-and-go snack, packed with wholesome ingredients like dates, oats, cranberries, and pecans. They’re naturally sweet, satisfying, and provide a sustained energy boost without any added sugar or extensive cooking. Ideal for busy mornings, afternoon slumps, or pre-workout fuel.

1 cup (about 15-18) pitted Medjool dates
1 cup old-fashioned rolled oats
1/2 cup raw pecans
1/2 cup dried cranberries
2 tablespoons chia seeds
1/4 teaspoon ground cinnamon (optional)
Pinch of salt
1–2 tablespoons water (if needed)

Instructions

Step 1: Combine pitted Medjool dates, rolled oats, raw pecans, dried cranberries, chia seeds, optional cinnamon, and a pinch of salt in a food processor.
Step 2: Process the mixture until it comes together and forms a sticky dough. It should be able to hold its shape when pressed. If the mixture seems too dry, add water one tablespoon at a time and pulse again until the desired consistency is reached. The goal is a uniform, sticky dough for your cranberry pecan energy bites.
Step 3: Roll the mixture into approximately 1-inch balls. You should get around 18 cranberry pecan energy bites from this batch.
Step 4: Place the finished cranberry pecan energy bites on a plate or baking sheet lined with parchment paper.
Step 5: Refrigerate the energy bites for at least 30 minutes to allow them to firm up before serving. Store any remaining cranberry pecan energy bites in an airtight container in the refrigerator for up to 2 weeks, or freeze for longer storage.

Notes

For best results, use fresh, soft Medjool dates. If your dates are a bit dry, soak them in warm water for 5-10 minutes before draining and using. You can also add a scoop of your favorite protein powder for an extra boost. Feel free to customize with other nuts or dried fruits!
