Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or non-stick spray.
Step 2: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
Step 3: In a separate medium bowl, beat the egg, then stir in the orange juice, vegetable oil, and orange zest.
Step 4: Pour the wet ingredients into the dry ingredients and stir with a spatula just until moistened. Do not overmix.
Step 5: Gently fold in the cranberries and toasted walnuts until evenly distributed throughout the batter.
Step 6: Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
Step 7: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Step 8: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, wrap the cooled bread in plastic wrap and let it sit overnight before slicing; the flavors develop and the texture softens.
