Ingredients
1.5 lbs boneless, skinless chicken thighs
1 tbsp olive oil
1 tsp paprika
Salt and freshly ground black pepper to taste
4 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
4 oz cream cheese, softened
1/4 cup fresh parsley, chopped
2 tbsp fresh chives, chopped
Instructions
Step 1: Prep the Chicken. Pat your chicken thighs thoroughly dry with paper towels. This is crucial for achieving that beautiful golden-brown sear. Season them generously on both sides with salt, black pepper, and paprika.
Step 2: Sear the Chicken. Heat olive oil or your preferred cooking oil in a large, oven-safe skillet over medium-high heat. Once shimmering, add the chicken thighs, ensuring not to overcrowd the pan. Sear for 4-6 minutes per side, until deeply golden brown and cooked through (internal temperature of 165°F or 74°C). Remove the chicken from the skillet and set aside on a plate, tented with foil to keep warm and allow the juices to redistribute.
Step 3: Sauté Aromatics. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 1 minute until fragrant, being careful not to burn it. If there’s a lot of fond at the bottom of the pan, add a splash of chicken broth or white wine to deglaze, scraping up those flavorful bits with a wooden spoon.
Step 4: Build the Creamy Sauce. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Reduce the heat to low. Add the softened cream cheese to the skillet, stirring constantly with a whisk until it’s completely melted and the sauce is smooth and creamy. Season with a pinch of salt and pepper to taste.
Step 5: Add the Herbs. Stir in the fresh parsley and chives. These fresh herbs add a vibrant burst of flavor and color, elevating the overall experience of your dish.
Step 6: Combine and Serve. Return the seared chicken thighs to the skillet, nestling them into the creamy sauce. Let them simmer gently for 2-3 minutes to warm through and allow the flavors to meld beautifully. Garnish with a little extra fresh parsley or chives before serving.
Notes
For best results, ensure cream cheese is at room temperature to prevent lumps. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop or in the microwave.
