8 oz (226g) full-fat cream cheese, softened to room temperature
1/2 cup (60g) powdered sugar (confectioners’ sugar)
1 teaspoon vanilla extract
Optional: 1-2 tsp lemon zest for a brighter flavor
Instructions
Step 1: In a large mixing bowl, add your softened full-fat cream cheese. Whip the cream cheese on medium speed for about 1-2 minutes, until it’s light and fluffy.
Step 2: Gradually add the powdered sugar to the whipped cream cheese. Mix on low speed until just combined after each addition. Once all sugar is incorporated, increase speed to medium-high and beat for another 2-3 minutes until very smooth and fluffy. Scrape down the sides of the bowl occasionally.
Step 3: Pour in the vanilla extract (and lemon zest, if using). Mix on low speed until just combined, being careful not to overmix.
Step 4: Taste the filling and adjust for sweetness if needed. Add a tablespoon more powdered sugar at a time if desired, mixing briefly until incorporated.
Step 5: For best results, cover the bowl and chill the filling in the refrigerator for at least 30 minutes. This allows the flavors to meld and the filling to firm up slightly, making it easier to spread.
Step 6: Once chilled, give the filling a quick stir before using. Spread generously onto your freshly made crepes, fold, and serve immediately with your favorite toppings.
Notes
Ensure cream cheese is at room temperature for a smooth, lump-free filling. For an extra light texture, you can sift the powdered sugar before adding it.
