2 lbs Yukon Gold or red potatoes, peeled (optional) and diced into 1-inch cubes
2 cups cooked ham, diced
1 (10.5 oz) can cream of chicken soup (or cream of mushroom/celery)
1/2 cup milk
4 oz cream cheese, softened
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried parsley
1/2 tsp salt (or to taste, depending on ham saltiness)
1/4 tsp black pepper
1.5 cups shredded sharp cheddar cheese (or cheese blend)
Instructions
Step 1: Grease your slow cooker insert with butter or cooking spray.
Step 2: In a large bowl, whisk together the cream of chicken soup, milk, softened cream cheese, garlic powder, onion powder, dried parsley, salt, and black pepper until smooth and well combined.
Step 3: Add the diced potatoes and diced ham to the creamy mixture in the bowl. Toss gently to ensure everything is evenly coated.
Step 4: Pour the potato and ham mixture into the prepared slow cooker. Spread it out evenly.
Step 5: Sprinkle the shredded cheddar cheese evenly over the top of the mixture.
Step 6: Cover and cook on low for 4-6 hours, or on high for 2-3 hours, or until the potatoes are fork-tender and the cheese is melted and bubbly. Cooking times can vary based on your slow cooker and potato size.
Step 7: Once cooked, gently stir the dish to distribute the melted cheese and creamy sauce. If desired, garnish with fresh chopped parsley before serving.

For best results, ensure your cream cheese is at room temperature before mixing. Adjust salt according to the saltiness of your ham. This dish reheats well and makes for great leftovers!
