2 large English cucumbers, thinly sliced
1/2 cup sour cream
2 tablespoons white vinegar
1 tablespoon fresh dill, chopped
1/2 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 red onion, thinly sliced (optional)
Instructions
Step 1: Slice the cucumbers into thin rounds and place them in a colander.
Step 2: Sprinkle salt over the cucumbers and let them sit for 10-15 minutes to draw out excess moisture.
Step 3: While the cucumbers rest, whisk together the sour cream, vinegar, sugar, dill, and pepper in a medium bowl.
Step 4: Pat the cucumbers dry with a paper towel and add them to the dressing bowl along with the red onions if using.
Step 5: Toss everything together until the cucumbers are thoroughly coated.
Step 6: Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
Notes
For best results, serve the salad chilled. If making ahead of time, add the dressing just before serving to keep the cucumbers at their crispiest.
