Ingredients
2 large English cucumbers, thinly sliced
1/2 small red onion, thinly sliced (optional)
1/2 cup sour cream
2 tablespoons white vinegar
1 tablespoon fresh dill, chopped
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1: Slice the cucumbers into thin rounds. If using standard cucumbers, you may want to peel them first.
Step 2: Place the sliced cucumbers in a colander and sprinkle with salt. Let sit for 15-20 minutes to drain excess water, then pat dry with paper towels.
Step 3: In a medium mixing bowl, whisk together the sour cream, vinegar, sugar, garlic powder, fresh dill, and black pepper until smooth.
Step 4: Add the cucumbers and red onion to the bowl and toss gently until every slice is thoroughly coated in the dressing.
Step 5: Cover and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
Notes
For a lighter version, replace sour cream with plain Greek yogurt. Always use fresh dill for the best flavor.
