Instructions
Step 1: In a medium-sized mixing bowl, combine the sour cream and mayonnaise. Whisk until the mixture is smooth and completely combined.
Step 2: Stir in the prepared horseradish, Dijon mustard, and fresh lemon juice. Ensure the horseradish is evenly distributed throughout the cream base.
Step 3: Season with kosher salt and black pepper. Taste the sauce and add more horseradish if you prefer a stronger kick.
Step 4: If using, fold in the chopped fresh chives for color and a mild onion flavor.
Step 5: Transfer the sauce to an airtight container and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
For the best flavor, use prepared horseradish rather than horseradish cream. If you want it extra spicy, grate some fresh horseradish root directly into the mixture.
