Ingredients
4 salmon fillets (6 oz each)
1 tablespoon olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1 small shallot, finely diced
1/2 cup chicken broth or dry white wine
1 cup heavy cream
1 large lemon, zested and juiced
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
Salt and black pepper to taste
Instructions
Step 1: Season the salmon fillets with salt and pepper on both sides.
Step 2: In a large skillet over medium-high heat, melt 1 tablespoon of butter with the olive oil. Sear the salmon for 4-5 minutes per side until golden brown, then remove and set aside.
Step 3: In the same skillet, add the remaining butter and sauté the garlic and shallot for 1-2 minutes until soft and fragrant.
Step 4: Pour in the chicken broth (or wine) to deglaze the pan, stirring to release the browned bits.
Step 5: Stir in the heavy cream, lemon zest, and lemon juice. Bring to a gentle simmer for 3-5 minutes until the sauce thickens slightly.
Step 6: Stir in the fresh dill and parsley. Return the salmon fillets to the pan and spoon the sauce over them. Simmer for another 2 minutes until the fish is cooked through and the creamy lemon herb salmon is well-coated.
Notes
Ensure the salmon is at room temperature before searing to ensure even cooking throughout.
