Creamy Lemon Orzo with Spinach

This Creamy Lemon Orzo with Spinach is a bright, comforting, and incredibly easy one-pan meal that’s perfect for a quick weeknight dinner or a light lunch. The tender orzo pasta is simmered in a rich, zesty lemon-infused broth, then finished with a touch of cream and wilted fresh spinach for a vibrant, satisfying dish.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 tbsp olive oil
1 small onion, finely diced
2 cloves garlic, minced
1 cup orzo pasta
4 cups vegetable broth (or chicken broth)
1/2 cup heavy cream (or plant-based cream for vegan)
Zest of 1 large lemon
Juice of 1 large lemon (about 1/4 cup)
5 oz fresh spinach
1/4 cup grated Parmesan cheese (plus more for serving, optional)
Salt and black pepper to taste
Fresh parsley or dill, chopped (for garnish, optional)

Instructions

Step 1: Heat the olive oil in a large skillet or pot over medium heat. Add the diced onion and cook until softened, about 5-7 minutes.
Step 2: Add the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic.
Step 3: Stir in the orzo pasta, coating it with the onion and garlic. Cook for 1-2 minutes, stirring constantly, until slightly toasted.
Step 4: Pour in the vegetable broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 10-12 minutes, or until the orzo is al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
Step 5: Remove from heat. Stir in the heavy cream, lemon zest, lemon juice, and Parmesan cheese (if using).
Step 6: Add the fresh spinach, a handful at a time, stirring until it wilts into the pasta. Continue until all spinach is incorporated and wilted.
Step 7: Season generously with salt and black pepper to taste. Serve immediately, garnished with fresh herbs and extra Parmesan if desired. Enjoy your delicious Creamy Lemon Orzo with Spinach!

Notes

For a dairy-free or vegan version, use a plant-based cream (like oat or cashew cream) and omit the Parmesan or use a vegan alternative. This dish is best served fresh but leftovers can be stored in an airtight container for up to 3 days. Reheat gently, adding a splash of broth or water if it seems too thick.
