Ingredients
1.5 lbs chicken thighs, cut into 1-inch pieces
1/2 cup cornstarch
1/2 tsp salt
1/2 tsp black pepper
3 cups cooked white rice (preferably day-old)
2 tbsp vegetable oil
1 cup frozen peas and carrots mix
2 large eggs, beaten
3 tbsp soy sauce
1 tbsp honey
1 tsp toasted sesame oil
2 cloves garlic, minced
2 green onions, sliced
Instructions
Step 1: In a large bowl, toss the chicken pieces with cornstarch, salt, and pepper until each piece is thoroughly coated.
Step 2: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Fry the chicken in batches until golden brown and crispy, then remove and set aside.
Step 3: Wipe out the pan and add the remaining oil. Sauté the garlic and frozen vegetables for 2-3 minutes until tender.
Step 4: Push the vegetables to one side of the pan and pour in the beaten eggs. Scramble until just set, then mix with the vegetables.
Step 5: Add the cold rice to the pan, breaking up any clumps. Stir-fry for 3-5 minutes until the rice is heated through and starts to toast.
Step 6: In a small bowl, whisk together soy sauce, honey, and sesame oil. Pour half of this sauce over the rice and toss to combine.
Step 7: Add the crispy chicken back into the pan and pour the remaining sauce over it. Toss quickly for 1 minute to glaze the chicken while maintaining its crunch.
Step 8: Garnish with sliced green onions and serve your crispy saucy chicken with vegetable fried rice immediately.
Notes
Always use cold, day-old rice for the best texture in your fried rice.
