Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 cup low-sodium chicken broth
1 tsp garlic powder
1 tsp onion powder
1 tsp dried Italian seasoning
1/2 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)
Cooking spray or oil for greasing
Instructions
Step 1: Lightly grease the inside of your slow cooker with cooking spray or a little oil.
Step 2: Place the chicken breasts or thighs in a single layer at the bottom of the slow cooker.
Step 3: In a small bowl, whisk together the chicken broth, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
Step 4: Pour the seasoned broth mixture evenly over the chicken in the slow cooker.
Step 5: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is very tender and easily shreds with a fork.
Step 6: Carefully remove the cooked chicken from the slow cooker and transfer it to a large bowl.
Step 7: Using two forks, shred the chicken into bite-sized pieces.
Step 8: Return the shredded chicken to the slow cooker with about 1/2 cup to 1 cup of the reserved cooking liquid (or more, to your desired juiciness). Stir to combine.
Step 9: Taste and adjust seasonings as needed. Serve warm and enjoy!
Notes
This recipe is incredibly flexible. Feel free to experiment with different spice blends like chili powder for a Mexican twist, or a dash of smoked paprika for a smoky flavor. For a thicker sauce, you can remove the chicken, whisk a tablespoon of cornstarch into a cup of the hot cooking liquid, and return it to the slow cooker on high for 15-20 minutes, stirring occasionally, before adding the shredded chicken back in.
