Ingredients
1.5 lbs ground beef
1 large yellow onion, diced
3 cloves garlic, minced
1 medium head green cabbage, chopped into 1-inch pieces
1 cup long-grain white rice, uncooked
2 cans (15 oz each) tomato sauce
1 can (14.5 oz) diced tomatoes
1/2 cup beef broth
2 tablespoons brown sugar
2 tablespoons apple cider vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Step 1: In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is no longer pink. Drain the excess fat.
Step 2: Stir the minced garlic into the meat mixture and cook for 1 minute until fragrant.
Step 3: In a medium bowl, whisk together the tomato sauce, diced tomatoes, beef broth, brown sugar, apple cider vinegar, and oregano.
Step 4: Place half of the chopped cabbage in the bottom of a 6-quart slow cooker.
Step 5: Layer the browned beef and onion mixture over the cabbage, then sprinkle the uncooked rice evenly over the meat.
Step 6: Top with the remaining cabbage and pour the tomato sauce mixture over the entire casserole.
Step 7: Cover and cook on Low for 7-8 hours or on High for 4 hours, until the cabbage is tender and the rice is cooked through.
Step 8: Stir gently before serving and garnish with fresh parsley or a dollop of sour cream if desired.
Notes
If you prefer a thinner consistency, add an extra 1/2 cup of beef broth. For a keto version, use 3 cups of cauliflower rice and reduce the broth to 1/4 cup.
