Creamy Herb Crockpot Chicken

2 lbs boneless, skinless chicken thighs
1 large yellow onion, chopped
4 cloves garlic, minced
1 cup chicken broth
8 oz cream cheese, softened and cubed
1/2 cup heavy cream
2 tbsp fresh thyme, chopped (or 1 tsp dried)
1 tbsp fresh rosemary, chopped (or 1/2 tsp dried)
1/4 cup fresh parsley, chopped
1 tsp salt
1/2 tsp black pepper
2 tbsp cornstarch (optional, for thicker sauce)
2 tbsp cold water (optional, with cornstarch)
Fresh chives, chopped, for garnish (optional)

Instructions

Step 1: Lightly grease the inside of your slow cooker.
Step 2: Place the chicken thighs at the bottom of the slow cooker. Season them generously with salt and pepper.
Step 3: Sprinkle the chopped onion, minced garlic, fresh thyme, and fresh rosemary over the chicken.
Step 4: Pour the chicken broth over everything.
Step 5: Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is cooked through and easily shreds.
Step 6: Once the chicken is cooked, carefully remove it from the slow cooker and set aside on a cutting board.
Step 7: Add the softened cream cheese and heavy cream to the slow cooker with the sauce. Whisk until the cream cheese is fully melted and the sauce is smooth. If you desire a thicker sauce, whisk together 2 tablespoons of cornstarch with 2 tablespoons of cold water in a small bowl, then stir this slurry into the sauce in the crockpot. Cook on high for another 15-20 minutes, or until thickened.
Step 8: Shred the cooked chicken using two forks, or cut into bite-sized pieces. Return the shredded chicken to the slow cooker and stir to coat it evenly with the creamy sauce.
Step 9: Stir in the fresh parsley.
Step 10: Taste and adjust seasoning as needed. Serve hot, garnished with fresh chives if desired. This is one of those crockpot chicken recipes that tastes even better the next day!

Notes
