Ingredients
2 lbs crookneck squash (about 3–4 medium squash)
2 tablespoons olive oil
3 cloves garlic, minced or thinly sliced
1 tablespoon fresh thyme leaves, chopped
1 teaspoon fresh rosemary leaves, chopped
½ teaspoon salt, or to taste
¼ teaspoon black pepper, freshly ground, or to taste
Optional: fresh parsley or grated Parmesan for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Wash the crookneck squash thoroughly. Trim off both ends. Slice the squash into even ½-inch thick rounds or half-moons.
Step 3: In a large bowl, combine the sliced crookneck squash, olive oil, minced garlic, fresh thyme leaves, and fresh rosemary leaves. Season generously with salt and freshly ground black pepper. Toss everything together until the squash is evenly coated.
Step 4: Spread the seasoned squash in a single layer on the prepared baking sheet. Ensure the squash pieces are not overcrowded. If necessary, use two baking sheets.
Step 5: Roast for 15-20 minutes, or until the squash is tender and beautifully caramelized around the edges. Halfway through cooking, give the squash a gentle toss or flip them with a spatula to ensure even browning.
Step 6: Remove from the oven and transfer to a serving dish. If desired, sprinkle with fresh parsley or a dash of Parmesan cheese just before serving. Enjoy immediately.
Notes
For best results, do not overcrowd your baking sheet; use two if necessary. Leftovers are great in salads or reheated. Feel free to experiment with other fresh herbs like oregano or marjoram for a different flavor profile.
