Ingredients
3–4 medium English or Persian cucumbers (about 2 lbs)
1 tsp salt, plus more to taste
1/4 cup apple cider vinegar (or white wine vinegar)
2 tbsp granulated sugar
1/4 tsp black pepper, freshly ground
1/4 cup fresh dill, finely chopped
1 tbsp olive oil (optional, for richness)
Instructions
Step 1: Wash the cucumbers thoroughly. Slice them very thinly using a sharp knife or a mandoline. For regular cucumbers, you may peel and deseed them if desired.
Step 2: Place the sliced cucumbers in a large colander. Sprinkle them with 1 teaspoon of salt and toss gently to coat. Let them sit over a bowl or in the sink for at least 30 minutes, or up to 1 hour, to draw out excess water.
Step 3: While the cucumbers are draining, prepare the dressing. In a small bowl, whisk together the apple cider vinegar, granulated sugar, black pepper, and optional olive oil until the sugar is fully dissolved.
Step 4: After draining, gently squeeze handfuls of the cucumbers to remove as much liquid as possible. Pat them dry with paper towels and transfer them to a clean mixing bowl.
Step 5: Add the finely chopped fresh dill to the bowl with the cucumbers.
Step 6: Pour the prepared dressing over the cucumbers and dill. Toss gently until all the cucumber slices are evenly coated.
Step 7: Cover the bowl and refrigerate the cucumber salad for at least 30 minutes before serving to allow the flavors to meld and the salad to chill thoroughly.

For best results, always salt your cucumbers to draw out excess water – this ensures a crisp, never-watery salad. Adjust sugar and vinegar to your personal taste. This salad tastes even better after chilling for an hour or two!
