Ingredients
2 large English cucumbers (or 4 Persian cucumbers)
1 tsp salt (for drawing out water)
3 tbsp rice vinegar
1 tbsp toasted sesame oil
1 tsp granulated sugar
1 clove garlic, minced
1/4 tsp red pepper flakes (optional, for a hint of heat)
2 tbsp fresh dill, chopped (or cilantro, parsley)
Instructions
Step 1: Wash and thinly slice the cucumbers. English or Persian cucumbers work best as their skins are thin and seeds are minimal. You can use a mandoline slicer for uniform slices (about 1/8-inch thick).
Step 2: Place the sliced cucumbers in a colander. Sprinkle with 1 teaspoon of salt and toss gently to coat. Let them sit over a bowl for 20-30 minutes to draw out excess water.
Step 3: While the cucumbers are draining, prepare the dressing. In a small bowl, whisk together the rice vinegar, toasted sesame oil, granulated sugar, minced garlic, and red pepper flakes (if using). Set aside.
Step 4: After the cucumbers have drained, rinse them thoroughly under cold running water to remove the excess salt. Pat them very dry with paper towels or a clean kitchen towel. This is crucial for a crisp salad.
Step 5: Transfer the dried cucumbers to a large mixing bowl. Pour the prepared dressing over the cucumbers and toss gently until all slices are well coated. Stir in the fresh chopped dill (or your chosen herb).
Step 6: For best flavor, cover the bowl and refrigerate the cucumber salad for at least 30 minutes to allow the flavors to meld. Serve chilled as a refreshing side dish.
Notes
For an extra crunch, you can add a sprinkle of toasted sesame seeds before serving. If you prefer a spicier kick, increase the amount of red pepper flakes or add a dash of sriracha to the dressing. This salad is best enjoyed within 1-2 days, but can last up to 3 days if properly stored.
