Ingredients
200g Medjool dates, pitted and chopped
1 cup boiling water
1 teaspoon baking soda
125g unsalted butter, softened
1/2 cup brown sugar
1 teaspoon vanilla extract
2 large eggs
1.5 cups almond meal (ground almonds)
1/2 cup all-purpose flour
1.5 teaspoons baking powder
1/4 teaspoon salt
1/4 cup flaked almonds for topping
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
Step 2: In a small heatproof bowl, combine the chopped dates, boiling water, and baking soda. Let it stand for 10-15 minutes until the dates are soft.
Step 3: In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Stir in the vanilla extract.
Step 4: Add the eggs one at a time, beating well after each addition until the mixture is smooth.
Step 5: Gently stir in the soaked date mixture (including the liquid). The mixture may look a bit curdled at this stage, but that is normal.
Step 6: Fold in the almond meal, all-purpose flour, baking powder, and salt until just combined. Do not overmix.
Step 7: Pour the batter into the prepared cake pan and smooth the top with a spatula. Sprinkle the flaked almonds evenly over the top.
Step 8: Bake for 40-45 minutes, or until a skewer inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a gluten-free version, replace the all-purpose flour with a 1:1 gluten-free baking blend or additional almond meal. Ensure your dates are very soft before mixing.
