Ingredients
4 cups Rice Krispies cereal
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup honey
1 teaspoon vanilla extract
Optional toppings: sprinkles, mini chocolate chips, or crushed nuts
Instructions
Step 1: Line an 8×8-inch square baking dish with parchment paper, leaving some overhang for easy removal.
Step 2: In a medium saucepan over low heat, combine the semi-sweet chocolate chips, peanut butter, and honey.
Step 3: Stir frequently until the mixture is completely melted and smooth. Remove from heat and stir in the vanilla extract.
Step 4: In a large mixing bowl, pour the melted chocolate mixture over the Rice Krispies cereal.
Step 5: Using a spatula, gently fold the cereal into the chocolate mixture until all the cereal is evenly coated.
Step 6: Pour the mixture into the prepared baking dish.
Step 7: Use the back of a spatula or your hands (dampened slightly to prevent sticking) to press the mixture evenly into the pan.
Step 8: If desired, sprinkle additional mini chocolate chips, nuts, or sprinkles on top while the mixture is still warm.
Step 9: Place the baking dish in the refrigerator for at least 30 minutes to allow the treats to set.
Step 10: Once set, lift the treats out of the pan using the parchment paper overhang. Cut into squares or rectangles.
Notes
For cleaner cuts, use a sharp knife and wipe it between cuts. You can easily adapt this recipe with different chocolate types or add-ins like mini marshmallows or dried fruit.
