Ingredients
6 large eggs
1/4 cup high-quality mayonnaise
1 teaspoon yellow mustard
1 teaspoon apple cider vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
Paprika for garnish
Instructions
Step 1: Place eggs in a single layer in a saucepan and cover with water by at least an inch.
Step 2: Bring water to a boil, then cover and remove from heat. Let eggs sit for 12 minutes.
Step 3: Prepare an ice bath. Transfer eggs to the ice bath for 5-10 minutes to cool completely.
Step 4: Gently crack and peel the eggs under running water.
Step 5: Slice eggs in half lengthwise and remove yolks into a medium bowl.
Step 6: Mash yolks with a fork and mix in mayonnaise, mustard, vinegar, salt, and pepper until smooth.
Step 7: Spoon or pipe the yolk mixture back into the egg white halves and sprinkle with paprika.
Notes
Use older eggs for easier peeling and always use an ice bath.
