Classic Deviled Eggs Recipe

Instructions

Step 1: Place eggs in a single layer in a medium saucepan. Cover with about an inch of cold water. Bring the water to a rolling boil over high heat.
Step 2: Once boiling, immediately turn off the heat, cover the pan with a lid, and let the eggs sit in the hot water for exactly 12 minutes for large eggs.
Step 3: Immediately transfer the cooked eggs to an ice bath (a bowl of ice water) and let them cool for at least 5 minutes. This stops the cooking and helps with peeling.
Step 4: Once cooled, gently crack the eggs all around and peel them under cool running water for the cleanest and easiest removal of the shell.
Step 5: Slice each peeled egg in half lengthwise. Carefully scoop out the bright yellow yolks into a medium bowl and place the pristine egg white halves on your serving platter.
Step 6: Use a fork to mash the egg yolks until they are completely smooth and free of any lumps. This ensures a creamy filling.
Step 7: Add the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper to the mashed yolks. Mix everything thoroughly until the mixture is light, fluffy, and perfectly combined.
Step 8: Taste the filling and adjust seasonings as needed. You might want a little more salt, pepper, or tanginess depending on your preference.
Step 9: Spoon the yolk mixture back into the egg white halves. For a neater and more professional presentation, you can use a pastry bag fitted with a star tip to pipe the filling.
Step 10: Garnish each deviled egg with a sprinkle of paprika and/or some freshly chopped chives.
Step 11: Chill the deviled eggs in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully and ensures they are perfectly cold.
