Creamy Summer Dill Potato Salad

A classic, herb-forward potato salad featuring fresh dill, red potatoes, and a perfectly balanced creamy dressing.

Ingredients

3 lbs Red potatoes, cubed
1/2 cup Mayonnaise
1/2 cup Greek yogurt
2 tbsp Dijon mustard
1/4 cup Fresh dill, chopped
3 Green onions, sliced
1 tbsp Apple cider vinegar
1 tbsp Lemon juice
1 tsp Garlic powder
Salt and pepper to taste

Instructions

Step 1: Place cubed red potatoes in a large pot and cover with cold salted water. Bring to a boil and simmer for 10-12 minutes until fork-tender.
Step 2: Drain the potatoes and immediately drizzle with apple cider vinegar while warm. Let them cool for 20 minutes.
Step 3: In a large bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
Step 4: Gently fold the cooled potatoes into the dressing mixture until well coated.
Step 5: Stir in the fresh dill and green onions. Chill in the refrigerator for at least 1 hour before serving.

Notes

For the best flavor, let the salad sit in the refrigerator overnight before serving.
